The difference between gelato and ice cream, according to this website, hinges on the amount of air (filler) involved and the amount of cream versus milk. Gelato is actually lower in fat than ice cream, because it uses more milk instead of more cream, but it tastes creamier because it’s so dense (great taste! less fillers!). On that note, I am going to take the spouse on a hot date to the local patisserie, where I saw gelato recently.
